People often vaguely assume that a subtropical climate means abundant food, but things seem quite different. Especially Laos, located deep inland in Indochina, seemed to have less food than neighboring countries.

The wet and dry seasons are distinct, so fortunately, it rains every day during the rainy season, making it possible to cultivate crops. However, during the dry season, watching the rain is almost a blessing, making crop cultivation nearly impossible. This is because over 70% of the country’s land is mountainous,

The reasons are the lack of agricultural water and the intense UV rays from the hot sun, which prevent crops from growing as expected. Of course, not all are like this, but this phenomenon is especially pronounced in mountainous areas.

Also, because crops are grown without pesticides or fertilizers, they tend to become soft and spoil quickly, which is one of the reasons. Perhaps because of this, I saw during my travels that most of the livestock in Laos are thin and not fattened,

I think this is the environmental relevance. Although there are many weeds, the lack of moisture under the hot sun means nutrient deficiencies, making it difficult to get balanced nutrition no matter how much you eat.

Grazing is not only about cattle; even household dogs and chickens lack meat. Perhaps this is why people tend to be small, but most travelers think it’s simply due to underdeveloped economic hardships.

As someone currently traveling experientially, I could truly feel that environmental factors play a bigger role. Still, since they are human too, they cannot neglect the necessary nutrition, and above all, to supply essential protein,

I can’t help but prefer the chickens and pigs nearby, but for some reason, pigs seem to be the perfect fit and I like them more. Compared to chicken, pigs have relatively more meat, and their price is almost the same depending on weight,

It seemed like I was choosing a pig with nothing left to throw away. It was clear that pigs, which offer a wider variety of flavors depending on the cut, were more realistic. A medium-sized black pig (about 70~80 kilograms), said to be the most delicious, costs around 1,000,000 kip,

Although it’s an enormous amount, when converted to Korean currency, it only comes to about 100,000 won. However, even in Laos’ economic reality, this is burdensome, so more than ten households join and divide into small portions, so they have no choice but to slaughter one large pig.

Each household would pay about 100,000 kip (about 10,000 won), meaning at least 5kg would be circulated per household. Compared to the price of about 30,000~40,000 kip, or 5,000~6,000 won at the market, buying 1kg of pork at the market is incredibly cheap.

Since these pigs are live, they naturally must be slaughtered themselves, but since Laos has no laws prohibiting ordinary people from slaughtering in the mountains, anyone can eat whatever they find comfortable.

So, the question is, ‘You can’t eat it because you don’t have it or can’t eat it because you don’t know how to catch it.’ The technique of slaughtering pigs also depends on how quickly they can stop their breath and prevent them from struggling. Come to think of it, the older women are also stepping up without hesitation.

It takes only about 30 minutes to slaughter a pig, and since that’s a skill, the person in charge of slaughtering the pig shares the same meat with others without paying in return, so it’s not something everyone has to do.

As expected, the way pigs are caught is similar everywhere. First, the pig stops breathing, then soaked with boiling hot water, scraped with a small spoon or similar tool, the hair is removed, the neck is cut off, and the belly is cut. Currently, nothing is thrown away except for the hair,

It must be technically butchered without bursting the intestines or spilling blood on the ground. What was unusual was that, just as we eat raw blood from cows, they also eat pig pronunciation. I just wish it would be a bit more thoroughly cooked before eating,

Maybe because of the long special nutrition supply and the tedious wait, it was just a bit of a burn, and even though the blood was still polling, they ate it without any hesitation. All I can say is ‘Beoppennyang’ (it’s okay).

The pigs caught in this neighborhood, including the butcher, were distributed among 11 households, and most of the meat is grilled immediately upon taking home. Usually, the staple food is gathered with khao ni yao (glutinous rice) by hand and dipped in ‘jeo’ (fermented soybean paste), which is eaten together.

When grilling, just sprinkle a little salt on top, and no seasoning is used at all. Still, the charcoal-grilled black pork, perhaps because it’s free-range and naturally raised, has a quality of quality that can only be described as excellent.

The downside is that for those who don’t enjoy the broth, there is hardly any way to cook stew; kimchi stew is only a matter of imagination. Of course, you separate the bones and cook them, but that’s just to add the broth and mix them with rice noodles,

Even then, they only eat the noodles and hardly eat the broth. Why? I’m not sure if that’s true, but maybe it’s because of my small build and small rice cooker, or maybe I wonder, “Is there really a need to boil meat that can’t even be grilled to eat?” That’s all, I think.

Meanwhile, since storage methods like refrigerators are limited in the mountain village, no matter how precious the meat is, it is not necessary to save it; the meat caught that day must be grilled and eaten that day, so the hospitality toward the guests is inevitably generous.

Sometimes they make jerkies and eat them for a long time, but petty thieves like dogs or cats won’t just stand by, so it’s a barbecue party held on a day anyway. It’s just the whole family gathering all day to play and play around,

The best reality was to take it easy and eat it all until it was gone. In other words, it’s about 5~6kg of meat, which is not much for a family to gather and eat, so it’s not enough to leave something behind, so it’s wise to just gather and eat it all.

Fortunately, for those who usually share news, this is enough to make for an incredibly abundant day. The hygiene of slaughter is terrible, but it’s too much for one person to eat alonecows, chickens, and pigswhen you share them among several people,

나홀로 라오스여행 110째날, 즐거운 비비큐 파티!

오늘은 핫타이에서 팍나이까지, 걸어서 29km를 갔다.

여느 날과 마찬가지로, 새벽바람에 길을 나서려고, 잠시 마당에 멈춰 서서 민박집 주인과 가족들에게 감사인사를 전하는데, 주인아주머니 왈, “오늘은 동네에 돼지고기 파티가 열리는 날이라고 하면서,

얼마전 자신이 직접 내린, 라오라오(보드카와 같은, 증류기로 내린 찹쌀 술)가 있으니 한잔하고 가자 않겠냐?”고 하는 것이었다. “아이고! 고맙기도 하셔라~” 어제 하룻밤 신세를 진 것도 고맙기만 한데,

어디가 예쁘다고 바비큐파티에 초대까지 해주는 건지, 당연 “참새가 방앗간을 어찌 그냥 지나갈 수 있느냐?”며, 하루 더 머물고 떠나겠다고 했다. 라오스의 농민들은 대부분 농본기라 해도, 우리같이 김을 메고 농약을 치는 등,

가능하면 좀더 많은 수확을 하기 위한 관리를, 특별히 잘 하지 않는다. 그저 자연의 섭리에 모든 것을 맡기고, 가을 수확에서 많든 적든 만족을 한다. 그렇다면 기나긴 건기의 농한기에 남자들은, 더 더욱 할 일이 별로 없는 곳이, 라오스의 외딴 농가들이다.

농사일을 거드는 부업도 없고, 도회지에 나가도 할 일이 별로 없기 때문에, 그저 동네 그늘에서 한가로이 쉬거나, 소일거리로 강가에 나가 물고기를 잡으며 하루를 보낸다. 그렇게 건기의 라오스 사람들은

동네 공터에서 “뻬땅끄(당구공크기의 쇠구슬로 하는 놀이)”를 즐기거나, 기껏해야 낚시를 하는데, 오늘처럼 가끔씩 날을 잡아 소나 돼지를 잡아, 마을 전체가 조그마한 잔치를 벌이는 정도가 일과이고, 주요행사라고 할 수 있다.

흔히들 아열대 기후라고 하면, 지천에 먹을 것이 풍부할 것이라고, 막연하게 생각하기 쉽지만, 현실은 생각과는 많이 다른 것 같다. 특히 인도차이나의 내륙 깊숙이 위치한, 라오스는 주변국에 비해 먹을 것이 풍부하지 못한 것 같았다.

우기와 건기가 두렷하여, 다행히 우기에는 매일 비가 내려 주기에, 농작물 경작이 가능하지만, 건기에는 거의 비를 구경하는 것이 행운일 정도이기에, 농작물 경작은 불가능에 가까운데, 그것은 국토의 대부분 약70%이상이 산악지형으로 이뤄져,

농업용수의 부족과, 뜨거운 태양에 강렬한 자외선으로, 생각처럼 농작물이 잘 자라지 못하는 것이 그 이유라고 할 수 있다. 물론 다 그런 것은 아니라고 하지만, 대체적으로 산간지역에서 특히 두드러진 현상이다.

또한 농약이나 비료를 사용하지 않고 농사를 짓기 때문에, 농작물 들이 쉬이 무르고 빨리 상하는 것도, 그 이유중의 하나이다. 그래서 그런지 여행을 하면서 볼 수 있었던, 라오스의 대부분에 가축들도 살찌지 못하고 마른 이유가,

이런 환경적 연관성에 있다고 생각이 드는데. 각종 잡풀은 많지만 뜨거운 태양 아래 수분이 부족한 관계로, 영양소 등의 결핍에 따라, 아무리 먹어도 고른 영양분 섭취가 쉽지 않기 때문이란 것이다.

방목을 하는 것은 소 뿐만 아니라, 집안의 개나 닭도 살점이 없기는 마찬가지, 어쩌면 사람들의 왜소 함도 이런 이유가 아닌가 생각이 되는데, 대부분의 여행객들은 그저 낙후된 경제적 어려움 때문으로만 생각하지만,

지금 체험여행을 하는 나로서는, 실제 환경적 요인이 더 크다는 것을 실감할 수 있었다. 그래도 이들 역시 사람이기에, 필요한 영양공급을 소홀히 할 수 없기에, 무엇보다 필수 단백질 공급을, 하기 위해,

가까이에 있는 닭과 돼지들을 선호할 수밖에 없는데, 왠지 돼지가 더 안성맞춤, 더 좋아하는 것 같았는데, 아마 닭보다는 상대적으로 그래도 살점이 풍부하고, 무게에 따른 가격 또한 거의 같은 가격대이다 보니,

버릴 게 하나도 없는, 돼지를 선택하는 듯 싶었다. 더 더욱 부위별로 다양한 입맛을 느낄 수 있는 돼지가 아무래도 좀더 현실적이란 것이 분명했다. 가장 맛있다는 중간 크기(70~80킬로그램 정도)의 흑 돼지 한 마리 가격은 100만낍 정도,

엄청나게 큰 단위지만, 우리 돈으로 환산하면 고작 10만원 정도 밖에 되지 않는다. 그러나 그것도 라오스의 경제적인 현실에서는 부담스러워, 10가구 이상이 동참하여 십시일반 나누어서, 겨우 큰 돼지 한 마리를 잡을 수밖에 없다는 것이다.

한 가구 당 10만킵(한화 1만원 정도) 정도를 부담하고, 1가구당 최소 5kg 정도가 돌아가는 셈이다. 시장에 나가 돼지고기 1kg을 구입하려면 약 3~4만킵, 우리 돈으로 5~6천원 하는 것에 비하면, 무지무지 싼 가격이 아닐 수 없다.

이렇게 구입한 돼지는, 살아 있는 돼지이기에, 당연 직접 도축을 해야 한다는 것인데, 라오스는 산골 일반인들이 도축을 금지하는 법률 등이 없기에, 누구나 적당히 알아서 편한데로 잡아먹으면 된다는 것이다.

그렇다면 없어서 못 먹지, 잡을 줄 몰라 못 먹겠냐는 것인데, 돼지를 도살하는 그 기술 또한 얼마나 빠르게 숨통을 끊어, 발버둥치지 않도록 하는가에 달렸다는 것뿐이라고 한다. 그러고 보니 아줌마들도 서슴지 않고 나서고들 있는데

돼지 한 마리를 잡는데 걸리는 시간은, 고작 30여분 정도, 그것도 기술이기에 도살을 맡은 사람은 돼지를 도살하는 대신, 그 대가로 돈을 내지 않고도 남들과 똑같이 고기를 나누어 가져가기에, 마다 할 일이 아니라는 것이다.

역시 돼지를 잡는 방법은 어디에서 든 비슷한데. 일단 돼지의 숨통을 끊어, 펄펄 끓는 뜨거운 물을 뿌려 불려서, 작은 숟가락 등으로 긁어, 털을 벗겨 낸 다음 목을 절단하고 배를 가른다. 이 때 털만 빼고는 버리는 것이 하나도 없기에,

내장을 터뜨리거나 피를 땅에 흘리지 않고 기술적으로 도살해야 만 한다. 특이한 것은 우리가 소의 생 피 선지를 먹듯이, 이들은 돼지의 선지도 먹는 다는 것이었다. 다만 조금 더 완전히 익혀서 먹으면 좋겠다는 바램 인데,

아마도 오랜만의 특별 영양공급에, 기다리기 지루해서 인지, 그저 불에 그을린 정도에, 아직 피가 고인 것이 보이는데도 아무런 거리낌 없이 먹어 댄다. 오직 한마디 ‘버뻰냥(괜찮다)’이라고 할 뿐이다.

이렇게 이 동네에서 잡은 돼지는, 도살 자를 포함해 모두 11가구가 배분했는데, 고기는 집에 가지고 가자 마자 대부분 바로 구워 먹는데, 주로 주식인 카오니야오(찹쌀밥)를 손으로 뭉쳐, 우리의 된장과 같은 ‘째오’를 찍어 함께 먹는다.

구울 때는 약간의 소금을 뿌리는 것이 전부, 양념은 전혀 사용하지 않는다. 그래도 그렇게 숯불에 구운 흑돼지고기는, 방목을 해서 키운 자연산이라서 그런지, 나름대로 그 유질은 정말로 훌륭하다고 할 수밖에 없는데.

아쉬운 점은 국물을 즐기지 않는 이들에게는, 찌개를 끓여 먹는 법이 거의 없어, 단지 김치찌게는 상상을 할 뿐이다. 물론 별도로 뼈다귀를 발라 내어 삶기는 하지만, 그것은 육수를 내려 쌀 국수를 말아먹는 정도가 전부이고,

역시 이 때도 국수만 건져 먹지, 국물은 거의 먹지를 않는다는 것이다. ? 그런 지는 잘 모르겠지만, 왜소한 체격에 밥통이 작아서 인지, 아니면 “아마도 구워 먹기도 모자란 고기를 구태여 삶아 먹을 필요가 있을까?” 싶을 뿐이다.

한편 냉장고 등의 보관방법이 별로 없는 산골사정이다 보니, 아무리 귀한 고기라 해도 아낄 필요 없이, 그날 잡은 고기는 그 날로 다 구워서 먹어 치울 수밖에 없음이기에, 객식구에 대한 인심 또한, 후할 수밖에 없음이란 것이다.

간혹 육포를 만들어, 두고두고 먹기도 하기는 하지만, 역시 개나 고양이 등의 좀도둑 등이 가만히 놔두질 않아, 어차피 날을 잡아 벌이는 바비큐파티, 그저 하루 종일 온 가족이 모여서 도란도란 그리고 들랑날랑 하며,

다 없어질 때까지, 쉬엄쉬엄 먹어 치우는 것이 최상의 현실이었다. 그래 봐야 5~6kg정도의 고기, 한가족이 몰려들어 먹기에는 결코 많다고도 할 수 없어, 이것저것 빼고 남기고 할 정도가 아니기에, 그냥 모두모여 먹어 치우는 게 현명하다는 것이다.

다행히 평소 소식을 하는 이들에게는, 이 정도로도 더 없이 풍족한 하루가 아닐 수 없음으로, 충분하다는 것이다. 그렇게 도살의 위생은 엉망이지만, 혼자 먹기에는 부담스러운 소나 닭 그리고 돼지를 이렇게 여럿이 나누면,

주민들에게는 더 없이 좋은 단백질 공급원이 된다는 것인데, 참고로 이런 방식으로 가끔은 비싼 소도 잡아먹는다. 그리고 술을 좋아하는 사람이라면, 이들 원주민들이 주로 마시는 라오스식 보트카 ‘라오라오(40~60)’와 함께 곁들여 먹는

소고기 또는 돼지고기 숯불구이는, 산골생활의 하루를 행복하게 만드는, 정말 최상의 행사라는 것으로, 다만, 외국 여행자 등이 주의할 것은, 이들처럼 덜 익혀서 먹는다는 것만 조심하면, 라오스의 방목 소와 돼지의 바비큐는,

정말 둘이 먹다 하나가 죽어도 모를 정도로, 식 감 등이 아주 훌륭해, 어떤 사람에게도 최고의 웰빙 음식이 아닐 수 없을 것이라고 자신 있게 말 할 수 있음이다. 이제 나도 그만 떠들고, 어서 부는 바람에 떠밀려 가는,

저 하늘의 한 점 구름의 여유로움을 벗삼아, 라오라오 한잔 가득 따라서, 돼지고기 바비큐 한 접시의 금상첨화에, 빠져보는 것이 좋을 듯 싶은데, 어느새 상상만 해도, 벌써 입안 가득 군침이 가득차고 있었다.
